Curries are something I’ve learnt to enjoy as I’ve grown older. Maybe it’s an age thing but I rather like spicy food. Nothing fussy, I’m not a huge fan of fuss.
Cauliflower and carrot curry
One large onion chopped, 6/8 mushrooms chopped. Add to large pan with a 3tablespoons of oil and the same of cold water, add a large pinch of salt. Leave to soften. Add two large tablespoons of curry powder. Fry a little to brown but not burn. Add one tin of tomatoes and equal amount of water, one large carrot chopped and one large cauliflower chopped with two tablespoons of tomato purée. Cover and leave on a low heat for about 40mins
Serve with rice and fresh yoghurt to taste.
