The veg box

As part of my efforts to save the planet I have started having delivered a seasonal veg box from my local green grocers.

In these days of semi lockdown here in County Durham, it’s important to support local businesses where possible. The veg box is a bit of anything and so meals this week will be going with the flow’

Tonight’s was rather a random but very successful vegetarian meal. Although we’re not vegetarian or vegan. We’re what you’d call flexitarian.

Random veg supper

6 stalks of celery washed and chopped. 2 large carrots washed and chopped. One apple cored, chopped but not skinned (I used and eating apple) half a leek, sliced. Half a stalk of broccoli, chopped.

Sweat the veggies

Place in large pan or wok with 3 tablespoons of oil. Sweat the veggies for about 5mins.

Add one tin of chopped tomatos, 1 tablespoon of tomato purée. Half a mug (or tomato tin) of water and a large pinch of rock salt.

Add tomato

Cover and simmer for about 30min, checking in doesn’t stick or burn. If still running lift the lid for last 3 minutes of cooking time to help with evaporation. Remove from heat and rest for a moment.

Evaporate a little

I earlier thawed one of the blue vain camembert cheeses I bought reduced last Saturday. So I diced this and layer it on the top to begin to melt.

Allow to melt a little

I served it with the two corn on the cobs from my last veg box. This served two people. You could serve with rice or potatoes but we found it enough on its own.
