One of the best ways to save our environment is to eat from locally grown food. This is also one of the best ways of saving money and eating cheaply.
At this time of year we have plenty of root vegetables available and what better than a hearty healthy root veg mash. This is a great way of eating a selection of different root vegetables.

I always think of the vegetables as the main part of what I cook, meat or the protein as the side dish.
Mix root vegetables mash
Today I’ve used potato, carrots and swede. Take a selection of mix roots. Wash and chop, (I did peel the swede) place in a pan together.

Add enough water to cover two thirds. Add a good pinch of salt. Cover with a lid and bring to boil. Turn down heat and simmer for about 15mins
Strain, keep the juice for gravy or put in jug for a soup. This cooking juice is full of goodness and if you’re vegan or milk intolerant you could use it instead of milk and butter for the mash. (I normally give put it in the dog bowl to brighten up their day but it’s never tipped away)
Mash the veggies with a masher or folk, add a large knob of butter and some milk ( or a little veg water)

Serve with a meat side or grated cheese.
