Making use of what I have . .

Serves two

This is a risotto of 2 sausages chopped, half an onion chopped, half a squash chopped. Fried in a bit of oil until sausage bits are browned and the onions are soft. Add enough rice (whatever you have) add a good pinch of salt, one tin of tomatoes, double the amount of water to the volume of rice (I wash out the tomato tin at this point). I then added frozen spinach. Bring to boil , turn heat to lowest and cover. Leave for 20 minutes. Uncover and stir, simmer off any extra liquid that you might not want. Serve hot
