I always make my sourdough bread the morning before I bake it. I mixed the dough, saving some of my starter for future use.
After mixing and kneading I leave in the bowl to prove all day.
At 7pm ish I reshape, decide and place on trays and place in the oven. I leave it there so it’s safe from our pets. I leave the oven off.
When I get up the following morning the dough has risen and I just turn on the oven while getting ready for my day.
Then I can have fresh bread for breakfast.
I always divide the loaves and freeze on day of baking so I then have fresh bread daily. This gives the starter time to grow and gain strength for daily or alternate day feeding.
