Not going veganuary but eating less meat!

Less sausage rice

This meal is for 2 adults sized portions

Take 2 standard sized sausages, chop. One red onion, one white onion, skin and chop. Half a cooking apple, core and chop, leave skin on. Two large peppers, deseed and chop. Fry in a large pan the above with a glug of sunflower oil and a teaspoon of rock salt, until soft and slightly browned.

Add enough rice for two people, one tin of chopped tomatoes, one washed and chopped stalk of kale and double the volume of water to rice.

Bring to boil, stir, reduce heat to lowest, cover and simmer for 20 minutes
