Mixed vegetable medley

As a main or a side dish depends on what else you fancy eating.

Today’s offering is what I’ve harvested from our garden today, except the mushrooms.

Roughly chopped and thrown into a hot pan of a tablespoon of oil. Add salt and toss. It doesn’t matter if they are a little crunchy. To be honest I prefer veg on the al dente side.

Cooking veg like this helps to retain their vitamins and goodness. Instead of boiling them and throwing the cooking water and therefore goodness down to drain. Plus they retain their colour and look more appealing.

This is mushrooms, purple mangetout, yellow and green courgette, chopped runner beans and cherry tomatoes.
