Filo rolls

Well I was somewhat hungry this afternoon, which made for a creative result in the evening meal department!!

Filo pastry is one of those things best bought ready made. It’s very easy to use and comes in a roll, which can be found in the refrigerator department of any sizeable food store.

To use, you’ll need melted unsalted butter. Brush the butter over each layer as you fill with what filling you desired. It’s as simple as that.

Filo pastry cooks quickly so make sure you precook the filling, just a little if the filling is quick to cook.

Filo Rolls

Remove pastry from fridge and leave to become room temperature before use.

Make the filling. This can be anything you fancy, sweet or savoury. Not too liquid.

My filling was one onion chopped, two half peppers, one chilly and garlic. Soften in oil.

Remove to a bowl.

Add a little more oil and fry chopped mushrooms and two sausages. These were spicy ones.

Remove sausages and carefully chop into smaller pieces after the sausages are browning as this makes them easier to cut. Return to pan.

Return the vegetables and stir. Remove from heat.

Warm some unsalted butter in a pan, melt not boil.

Brush the butter onto the top filo sheet the place a couple of spoonfuls of mixture onto the sheet near the middle edge.

Roll folding the ends inward

Place on a buttered tray and brush with butter

Bake in a medium oven for about 10-15 minutes or as soon as they are brown
